Barley miso (mugi miso) is a traditional type of miso made from soybeans, barley koji (koji is made by using cooked grains that have been inoculated with a fermentation culture; Aspergillus oryzae), and salt.

Barley miso is typically darker red in color and heartier in texture than a white or brown rice miso.  The chunkier texture and hearty taste gave barley miso the nickname "country miso" - hence our barley miso is called Country Barley Organic Miso in honor of this deeply savory miso paste variety.

Country Barley miso is NOT GLUTEN FREE.
