Blackstrap molasses is created during the third and final boiling of sugarcane juice in the sugar refining process. Each boiling extracts sugar crystals, leaving behind a progressively darker and more concentrated syrup. The first boil produces light molasses, the second yields dark molasses, and the third produces blackstrap molasses, which is the least sweet, thickest, and most mineral-dense variety. Its color is deep brown to nearly black, and it has a bitter, robust flavor that distinguishes it from lighter molasses.
Blackstrap molasses is commonly used as a natural sweetener, dietary supplement, or ingredient in baking and cooking. Its strong flavor pairs well with recipes that balance sweetness, such as gingerbread, sweet potato dishes, or marinades.
