Organic Light Molasses

Light molasses, also called first molasses or Barbados molasses, is the syrup obtained from the first boiling of sugar cane juice during the sugar refining process. It retains a significant portion of the original sugar, which gives it a lighter color (often amber to golden-brown) and a milder, sweeter flavor compared to dark or blackstrap molasses. Light molasses also contains vitamins and minerals such as iron, calcium, magnesium, and potassium, and has a lower glycemic value than refined sugar.
